Preparation
- Preheat your oven to 350°F (175°C). While it heats, butter a baking dish.
- In a large bowl, mix sliced peaches with 1/2 cup of sugar. Allow them to sit and macerate for about 10 minutes. The sugar draws out moisture, creating a sweet peach syrup.
- In another bowl, whisk together the flour, remaining sugar, baking powder, and salt.
Mixing the Batter
- Add melted butter and milk to the dry ingredients, mixing until just combined. The batter will be slightly lumpy—this is perfect!
Baking
- Pour the batter into the prepared baking dish, spreading it evenly.
- Spoon the peach mixture over the batter, including all the syrup, but do not stir; the peaches will sink as it bakes.
- Bake in the preheated oven for 30-35 minutes until the top is golden brown, and a toothpick inserted into the batter comes out clean.
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Drizzle with caramel sauce for an extra indulgence. Leftovers can be stored at room temperature for up to 2 days or refrigerated for up to a week. Reheat in the oven or microwave.
