Preparation
- Start by preheating your grill to medium-high heat. Cut a large piece of aluminum foil to create a packet for your shrimp.
- In a bowl, combine the olive oil, minced garlic, paprika, cayenne pepper, chili powder, salt, and pepper. This flavorful blend will seep into the shrimp as they cook.
- Add the shrimp to the marinade and toss to coat evenly. Allow it to marinate for about 10 minutes for maximum flavor.
- Place the marinated shrimp in the center of the foil. Fold the edges of the foil together to create a sealed packet.
Cooking
- Place the foil packet on the grill and cook for 10-15 minutes until the shrimp are opaque and pink.
- Carefully open the packet (watch out for the steam) and transfer the shrimp to a serving dish. Garnish with chopped parsley and serve with lemon wedges.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat. Avoid using the microwave as it makes the shrimp rubbery.
