  • 1 pound shrimp, peeled and deveined (fresh or frozen)
  • 3 tablespoons olive oil Can substitute with avocado oil for a cleaner profile.
  • 2 cloves garlic, minced
  • 1 teaspoon paprika Can swap for smoked paprika for deeper flavor.
  • 1 teaspoon cayenne pepper Adjust to taste.
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Method
 

Preparation
  1. Start by preheating your grill to medium-high heat. Cut a large piece of aluminum foil to create a packet for your shrimp.
  2. In a bowl, combine the olive oil, minced garlic, paprika, cayenne pepper, chili powder, salt, and pepper. This flavorful blend will seep into the shrimp as they cook.
  3. Add the shrimp to the marinade and toss to coat evenly. Allow it to marinate for about 10 minutes for maximum flavor.
  4. Place the marinated shrimp in the center of the foil. Fold the edges of the foil together to create a sealed packet.
Cooking
  1. Place the foil packet on the grill and cook for 10-15 minutes until the shrimp are opaque and pink.
  2. Carefully open the packet (watch out for the steam) and transfer the shrimp to a serving dish. Garnish with chopped parsley and serve with lemon wedges.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet over low heat. Avoid using the microwave as it makes the shrimp rubbery.
