Ingredients
  

For the Wonton Cups
  • 1 package wonton wrappers Found in the refrigerated section
  • 1 cup fresh spinach, chopped Or swap with kale for a stronger flavor
  • 1 cup artichoke hearts, chopped Canned or frozen works great!
  • 1 cup cream cheese, softened
  • ½ cup sour cream
  • 1 cup shredded mozzarella cheese Or substitute with cheddar for a twist
  • 1 clove garlic, minced
  • to taste salt and pepper
  • Olive oil For brushing the wontons

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin with olive oil.
  3. Carefully press each wonton wrapper into the muffin tin cups.
  4. Brush the edges of the wonton wrappers with a bit of olive oil.
  5. In a medium bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, mozzarella cheese, minced garlic, salt, and pepper. Stir until smooth.
  6. Spoon the filling into the prepared wonton cups.
  7. Bake for 15 minutes or until the wontons are golden brown and the cheese is bubbly.
  8. Allow to cool slightly before serving.

Notes

These cups can be made ahead of time. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven to maintain crispiness.
