Spinach and Feta Pinwheels

Ingredients
  

For the Filling
  • 1 cup fresh spinach or substitute with kale for a stronger flavor
  • 1 cup crumbled feta cheese use goat cheese for a tangy twist
  • 1/2 cup cream cheese, softened to add that creamy, rich texture
  • 1/4 cup grated Parmesan cheese optional, for extra depth
  • 1 clove garlic, minced or more if you love garlic
  • 1 package puff pastry, thawed you can also use tortillas for a quicker version
  • 1 egg beaten for an egg wash to give a golden finish
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the fresh spinach, crumbled feta, cream cheese, grated Parmesan, minced garlic, salt, and pepper. Mix until well-combined.
  3. On a floured surface, roll out the thawed puff pastry into a rectangle.
  4. Evenly distribute the spinach and feta mixture across the pastry.
  5. Starting from one end, carefully roll the pastry into a log shape.
  6. Using a sharp knife, cut the log into 1-inch thick pieces.
  7. Place the pinwheels on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
Baking
  1. Bake for about 20 minutes or until they are puffed and golden.
  2. Allow them to cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze before baking. Reheat in the oven at 375°F (190°C) for about 10 minutes.
