Preparation
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the fresh spinach, crumbled feta, cream cheese, grated Parmesan, minced garlic, salt, and pepper. Mix until well-combined.
- On a floured surface, roll out the thawed puff pastry into a rectangle.
- Evenly distribute the spinach and feta mixture across the pastry.
- Starting from one end, carefully roll the pastry into a log shape.
- Using a sharp knife, cut the log into 1-inch thick pieces.
- Place the pinwheels on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
Baking
- Bake for about 20 minutes or until they are puffed and golden.
- Allow them to cool for a few minutes before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze before baking. Reheat in the oven at 375°F (190°C) for about 10 minutes.
