Preparation
- In a large skillet, heat the olive oil over medium heat. Add the spinach and sauté for about 2-3 minutes until wilted. Season with salt and pepper, and then remove from heat.
- On a clean surface, lay out two tortillas. Sprinkle half of the mozzarella cheese evenly over each tortilla, followed by evenly distributing the sautéed spinach and feta cheese.
- Top with the remaining mozzarella cheese, and cover with the other tortillas.
Cooking
- Wipe down the skillet and return it to medium heat. Cook the quesadillas one at a time for about 3-4 minutes on each side, or until golden brown and the cheese is melted. You might want to press down with a spatula to achieve that perfect crispness.
Serving
- Once cooked, remove from the skillet and let them cool for a minute. Cut into wedges and serve warm.
Notes
Feel free to get creative with your quesadilla fillings! Add proteins like shredded chicken or black beans for a heartier dish. You can also spice it up with jalapeños or change the greens to arugula or Swiss chard.
