  • 4 large flour tortillas Feel free to swap for whole wheat or corn tortillas for a healthier alternative.
  • 2 cups fresh spinach Opt for baby spinach for a milder flavor or kale for a more robust taste.
  • 1 cup crumbled feta cheese This creamy cheese brings tanginess; consider substituting with goat cheese if preferred.
  • 1 cup shredded mozzarella cheese This will add that gooey, melty texture; try a vegan cheese blend for a plant-based version.
  • 1 tablespoon olive oil Use butter for richer flavor or coconut oil for a dairy-free option.
  • to taste salt and pepper To taste.

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add the spinach and sauté for about 2-3 minutes until wilted. Season with salt and pepper, and then remove from heat.
  2. On a clean surface, lay out two tortillas. Sprinkle half of the mozzarella cheese evenly over each tortilla, followed by evenly distributing the sautéed spinach and feta cheese.
  3. Top with the remaining mozzarella cheese, and cover with the other tortillas.
Cooking
  1. Wipe down the skillet and return it to medium heat. Cook the quesadillas one at a time for about 3-4 minutes on each side, or until golden brown and the cheese is melted. You might want to press down with a spatula to achieve that perfect crispness.
Serving
  1. Once cooked, remove from the skillet and let them cool for a minute. Cut into wedges and serve warm.

Notes

Feel free to get creative with your quesadilla fillings! Add proteins like shredded chicken or black beans for a heartier dish. You can also spice it up with jalapeños or change the greens to arugula or Swiss chard.
