Preparation
- Preheat your oven to 375°F (190°C).
- Heat a drizzle of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about a minute.
- Add the spinach and cook until wilted, about 3 minutes. Remove from heat and let it cool.
- In a mixing bowl, combine the ricotta cheese, Parmesan cheese, egg, breadcrumbs, salt, pepper, and nutmeg. Once the spinach has cooled, chop it finely and mix it into the cheese mixture.
Assembly
- If using phyllo dough, lay out 3-4 sheets, brushing each layer with melted butter. Cut them into squares.
- Place a tablespoon of the spinach mixture in the center, fold the dough over, and seal securely.
- If using puff pastry, roll it out slightly, cut, and proceed similarly.
Baking
- Arrange the bites on a baking sheet lined with parchment paper. Brush tops with melted butter.
- Bake for 20-25 minutes, or until golden brown and crispy.
Serving
- Remove from oven and let them cool slightly. Serve warm with a side of marinara or yogurt sauce.
Notes
Can be frozen before baking and stored for up to 3 days in an airtight container in the refrigerator. Bake straight from frozen, adding a few extra minutes to the cook time.
