Spinach Ricotta Bites

Ingredients
  

For the Filling
  • 1 cup fresh spinach Can be swapped with kale for a stronger flavor.
  • 1 cup ricotta cheese Substitute with cottage cheese if desired.
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup breadcrumbs Use gluten-free breadcrumbs for a healthier option.
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg Optional, but adds warmth.
For the Dough
  • 1 package phyllo dough or puff pastry sheets

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about a minute.
  3. Add the spinach and cook until wilted, about 3 minutes. Remove from heat and let it cool.
  4. In a mixing bowl, combine the ricotta cheese, Parmesan cheese, egg, breadcrumbs, salt, pepper, and nutmeg. Once the spinach has cooled, chop it finely and mix it into the cheese mixture.
Assembly
  1. If using phyllo dough, lay out 3-4 sheets, brushing each layer with melted butter. Cut them into squares.
  2. Place a tablespoon of the spinach mixture in the center, fold the dough over, and seal securely.
  3. If using puff pastry, roll it out slightly, cut, and proceed similarly.
Baking
  1. Arrange the bites on a baking sheet lined with parchment paper. Brush tops with melted butter.
  2. Bake for 20-25 minutes, or until golden brown and crispy.
Serving
  1. Remove from oven and let them cool slightly. Serve warm with a side of marinara or yogurt sauce.

Notes

Can be frozen before baking and stored for up to 3 days in an airtight container in the refrigerator. Bake straight from frozen, adding a few extra minutes to the cook time.
