Cookie Ingredients
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract Can be substituted with other extracts.
Candy Filling
  • Colorful hard candies, crushed Use a mix for a mosaic effect or single color for clear centers.

Method
 

Preparation
  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, cream together butter and sugar until light and fluffy.
  3. Beat in egg and extracts.
  4. Gradually add the flour mixture, mixing until combined.
  5. Divide the dough into two discs, wrap in plastic, and chill for at least 2 hours.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the dough on a floured surface to 1/4-inch thick.
  3. Use cookie cutters to cut out shapes.
  4. Use a smaller cutter to cut out the center of each cookie.
  5. Fill the centers with crushed candies.
  6. Bake for 8-10 minutes or until edges are lightly golden.
  7. Allow to cool completely before removing from the pan.

Notes

Store cookies in an airtight container for up to 3-4 days. To protect candy centers, place parchment between layers if stacked. Avoid humidity which can make candy centers sticky.
