Preparation
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Beat in egg and extracts.
- Gradually add the flour mixture, mixing until combined.
- Divide the dough into two discs, wrap in plastic, and chill for at least 2 hours.
Baking
- Preheat the oven to 350°F (175°C).
- Roll out the dough on a floured surface to 1/4-inch thick.
- Use cookie cutters to cut out shapes.
- Use a smaller cutter to cut out the center of each cookie.
- Fill the centers with crushed candies.
- Bake for 8-10 minutes or until edges are lightly golden.
- Allow to cool completely before removing from the pan.
Notes
Store cookies in an airtight container for up to 3-4 days. To protect candy centers, place parchment between layers if stacked. Avoid humidity which can make candy centers sticky.
