Preparation
- Preheat your oven to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
- In a large skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is soft. Add the garlic and sauté for another minute.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix everything together until heated through.
Assembly
- Spoon the beef mixture into each bell pepper until they are filled to the top.
- Sprinkle the shredded cheese on top of the stuffed peppers for a gooey finish.
Baking
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbling and golden.
Serving
- Remove from the oven and let cool for a few minutes.
- Garnish with chopped parsley if desired and serve warm.
Notes
For enhanced flavor, toast any dried spices in the skillet for a minute before adding the meat. Store leftovers in an airtight container in the refrigerator for up to three days. Can be frozen before or after baking.
