  • 4 large bell peppers (any color you prefer)
  • 1 pound ground beef (or turkey for a healthier option)
  • 1 cup cooked rice (white or brown rice works well)
  • 1 can diced tomatoes (with juice)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Optional: chopped parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
  3. In a large skillet over medium heat, cook the ground beef and onion until the meat is browned and the onion is soft. Add the garlic and sauté for another minute.
  4. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix everything together until heated through.
Assembly
  1. Spoon the beef mixture into each bell pepper until they are filled to the top.
  2. Sprinkle the shredded cheese on top of the stuffed peppers for a gooey finish.
Baking
  1. Cover the baking dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 5 minutes, or until the cheese is bubbling and golden.
Serving
  1. Remove from the oven and let cool for a few minutes.
  2. Garnish with chopped parsley if desired and serve warm.

Notes

For enhanced flavor, toast any dried spices in the skillet for a minute before adding the meat. Store leftovers in an airtight container in the refrigerator for up to three days. Can be frozen before or after baking.
