  • 1 lb summer sausage, sliced Use your favorite type for varied flavor
  • 2 cups bell peppers, chopped Any color you love!
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups zucchini, sliced You can swap out for yellow squash if desired
  • 1 can diced tomatoes (14 oz)
  • 1 tsp Italian seasoning Or your preferred herb mix
  • Salt and pepper to taste
  • 1 tbsp olive oil Or vegetable oil

Method
 

Preparation
  1. In a large skillet over medium heat, add the olive oil.
  2. Once hot, toss in the diced onion and garlic, sautéing until the onion becomes translucent and fragrant, about 2-3 minutes.
  3. Add the sliced summer sausage to the skillet, allowing it to brown slightly.
  4. Toss in the zucchini, bell peppers, and diced tomatoes. Add the Italian seasoning, salt, and pepper, stirring everything together.
  5. Cook until the vegetables are tender, about 10-12 minutes.
  6. Reduce the heat and let the skillet concoction simmer for another 5 minutes.
  7. Remove from heat and enjoy hot.

Notes

This dish can be paired with crusty bread, rice, or a side salad and is also great for meal prep, storing well for several days.
