- Toss in the zucchini, bell peppers, and diced tomatoes. Add the Italian seasoning, salt, and pepper, stirring everything together.
- Cook until the vegetables are tender, about 10-12 minutes.
- Reduce the heat and let the skillet concoction simmer for another 5 minutes.
