Method
 

Preparation
  1. Heat a skillet over medium-high heat, add a splash of oil, and cook ground beef or turkey until no pink remains. Season with chili powder, garlic powder, smoked paprika, salt, and pepper.
  2. In a small saucepan, melt butter over low heat, whisk in a tablespoon of flour, then gradually add 1 cup milk until smooth. Stir in 1 1/2 cups shredded cheddar and a pinch of salt until velvety.
  3. Mash avocados with a squeeze of lime, a pinch of salt, and a spoonful of diced red onion.
Assembly
  1. Split buns, layer a spoonful of cooked meat, a drizzle of cheese sauce, and a dollop of guacamole or salsa.
  2. Toast in the oven at 350°F for 5–7 minutes until the edges are golden.
Serving
  1. Toast tortilla chips briefly on a baking sheet to bring out a nutty aroma. Serve with salsa, sour cream, and any leftover cheese sauce for dipping.
  2. Bake a skillet cookie or warm brownies and serve with scoops of ice cream.
