Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment.
- In a large bowl, mash the bananas until mostly smooth with a fork.
- Pour in the melted butter, then stir in brown sugar until glossy.
- Add the beaten egg and vanilla, mixing until combined.
- Sprinkle baking soda and salt over the mixture. Stir to combine, then gently fold in the flour.
- Mix just until the flour disappears; a few streaks are fine.
- Fold in your chosen add-ins like walnuts or chocolate chips.
Baking
- Pour the batter into your prepared loaf pan and smooth the top.
- Bake for 50 to 65 minutes, checking at 50 minutes.
- Let the loaf cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.
Notes
Store wrapped tightly or in an airtight container for up to 3 days. For freezing, wrap the loaf or slices in plastic, then foil; freeze up to 3 months.
