Ingredients
  

Main Ingredients
  • 3 pieces ripe bananas, mashed The browner they are, the more flavor.
  • 1/3 cup melted butter or neutral oil For olive oil, use a mild-flavored one.
  • 1/2 cup brown sugar Can swap part or all for coconut sugar for a deeper caramel note.
  • 1 large egg, beaten Or use a mashed ripe banana plus 1 tablespoon of chia seeds for an egg-free binder.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 1/2 cups all-purpose flour Or use half whole wheat flour to make it a healthy option.
Optional Stir-Ins
  • 1/2 cup chopped walnuts For added crunch.
  • 1/2 cup chocolate chips For a more indulgent flavor.
  • 1/4 cup dried fruit Such as raisins or cranberries.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment.
  2. In a large bowl, mash the bananas until mostly smooth with a fork.
  3. Pour in the melted butter, then stir in brown sugar until glossy.
  4. Add the beaten egg and vanilla, mixing until combined.
  5. Sprinkle baking soda and salt over the mixture. Stir to combine, then gently fold in the flour.
  6. Mix just until the flour disappears; a few streaks are fine.
  7. Fold in your chosen add-ins like walnuts or chocolate chips.
Baking
  1. Pour the batter into your prepared loaf pan and smooth the top.
  2. Bake for 50 to 65 minutes, checking at 50 minutes.
  3. Let the loaf cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

Store wrapped tightly or in an airtight container for up to 3 days. For freezing, wrap the loaf or slices in plastic, then foil; freeze up to 3 months.
