Ingredients
  

For the marinade
  • 1 cup pineapple juice The star of the glaze adds wonderful sweetness.
  • 1 tablespoon soy sauce For a touch of umami.
  • 1 tablespoon honey Natural sweetness that balances the heat.
  • 1 teaspoon sriracha Adjust this based on your heat tolerance.
  • 2 cloves garlic, minced Adds depth of flavor.
For the salmon
  • 4 fillets salmon Fresh or thawed, skin on or off depending on preference.
  • 1 tablespoon olive oil For cooking the salmon to perfection.
  • Fresh parsley, for garnish A dash of color to finish.

Method
 

Preparation
  1. In a small saucepan, combine pineapple juice, soy sauce, honey, sriracha, and minced garlic. Simmer over medium heat for about 5 minutes until slightly thickened.
  2. Place salmon fillets in a dish and pour half of the marinade over them. Let it marinate for 15 minutes.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat until shimmering.
  2. Carefully place the salmon in the skillet, skin-side down (if applicable). Cook for about 5-6 minutes on each side until golden and cooked through. You want the center to be slightly opaque.
  3. Pour the remaining marinade over the salmon during the last minute of cooking to caramelize the flavors.
Serving
  1. Garnish with fresh parsley and serve with your choice of sides, like fluffy rice or roasted vegetables.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven at 350°F (175°C) for about 10-15 minutes. Taste as you go and feel free to adjust sweetness or spice by adding more honey or sriracha.
