Preparation
  1. In a slow cooker, combine the pineapple chunks, soy sauce, brown sugar, ketchup, minced garlic, and ground ginger.
  2. Place the chicken breasts in the slow cooker.
  3. Season with salt and pepper.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  2. Shred the chicken in the sauce before serving.
  3. Garnish with chopped green onions if desired. Serve over rice.

Notes

Serve this dish over steamed rice to soak up the sauce. For more texture, add vegetables. Use chicken thighs for extra richness. If the sauce is too thin, reduce or use a cornstarch slurry to thicken.
