  • 2 medium sweet potatoes, peeled and cubed
  • 1 can black beans, rinsed and drained Can be substituted with chickpeas
  • 1 avocado, sliced
  • 2 cups mixed greens Can swap arugula for a peppery flavor
  • 1/2 cup corn, frozen or fresh
  • 1 medium red onion, thinly sliced
Seasonings and Drizzle
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Olive oil for drizzling
  • Salt and pepper to taste
Optional Toppings
  • salsa
  • Greek yogurt
  • a drizzle of tahini

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread the sweet potato mixture on a baking sheet in a single layer.
Cooking
  1. Place the baking sheet in the oven and roast the sweet potatoes for about 20-25 minutes, until they are golden and tender.
  2. Toss the sweet potatoes halfway through cooking for even caramelization.
Assembly
  1. While the sweet potatoes are roasting, prepare your bowl with a base of mixed greens.
  2. Layer the black beans, corn, sliced red onion, and avocado on top.
  3. Once the sweet potatoes are roasted, add them to the bowl.
  4. Top with optional salsa, Greek yogurt, or tahini, and enjoy!

Notes
