  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 whole avocado, diced Dice just before serving to prevent browning.
  • 1/4 cup chopped cilantro
  • 1 whole lime, juiced Can adjust lime and chili powder to taste.
  • 1 teaspoon chili powder

Preparation
  1. In a large bowl, combine the shredded chicken, corn, black beans, cherry tomatoes, avocado, and chopped cilantro.
  2. Squeeze lime juice over the mixture and add chili powder, salt, and pepper.
  3. Gently toss to combine.
  4. Serve in bowls and top with tortilla chips if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep avocado and tortilla chips separate to avoid sogginess. If the mixture releases liquid, give it a gentle toss before serving.
