Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish to prevent sticking.
- In a skillet over medium heat, cook the breakfast sausage, breaking it into pieces until it’s browned and fully cooked, about 5-7 minutes. Drain excess fat, if necessary.
- Spread the cooked sausage evenly at the bottom of the greased baking dish. Then layer the frozen tater tots on top.
- In a large bowl, whisk together the eggs, milk, salt, and pepper. Pour this mixture over the tater tots evenly.
- Sprinkle the shredded cheese generously on top of the tater tots and egg mixture.
Baking
- Bake in the preheated oven for 35-45 minutes, or until the cheese is melted and bubbly and the eggs are set.
- Allow it to cool for a few minutes before slicing. This will make serving easier.
Notes
This casserole can be prepared the night before and baked in the morning. For extra flavor, try toasting the spices in the sausage as it cooks. If you prefer a crispier topping, broil the casserole for the last few minutes of baking.
