Ingredients

For the Marinade
  • 1/4 cup soy sauce can be replaced with low-sodium soy sauce
  • 1/4 cup teriyaki sauce
  • 2 tablespoons brown sugar adds a touch of sweetness
  • 1 tablespoon sesame oil for added flavor
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated for a zesty kick
For the Skewers
  • 1 pound chicken breast cut into bite-sized pieces
  • skewers wooden or metal

Method

Preparation
  1. In a bowl, mix together the soy sauce, teriyaki sauce, brown sugar, sesame oil, minced garlic, and grated ginger to prepare the marinade.
  2. Add the chicken pieces to the marinade and stir until all pieces are well-coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours for enhanced flavors.
  3. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
Grilling
  1. Preheat the grill to medium-high.
  2. Thread marinated chicken onto skewers, leaving space between each piece for even cooking.
  3. Place the skewers on the grill and cook for 5-7 minutes on each side, or until the chicken is cooked through and has grill marks.
Serving
  1. Remove the skewers from the grill and let them rest for a minute.
  2. Serve with additional teriyaki sauce on the side for dipping.

Notes

Feel free to substitute chicken with tofu or veggies for a vegetarian option. These skewers are best served over jasmine rice or quinoa.
