  • 2 cups cooked rice Jasmine or brown rice works great
  • 1/4 cup teriyaki sauce Store-bought or homemade
  • 1 tablespoon oil Vegetable or sesame oil adds great flavor
  • 1 cup mixed vegetables Bell peppers, broccoli, and carrots are recommended
  • Sesame seeds For garnish
  • Green onions, chopped For garnish

Cooking
  1. In a large skillet over medium heat, add the oil. As it shimmers, you're ready to add the shrimp.
  2. Add the shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and opaque.
  3. Toss in your mixed vegetables and stir-fry for about 5 minutes, letting them soften but still retain their vibrant colors.
  4. Pour the teriyaki sauce over the shrimp and vegetables, stirring to ensure everything is coated.
  5. Divide the cooked rice into bowls and spoon the shrimp mixture on top, drizzling any extra sauce from the pan over the dish.
  6. Sprinkle with sesame seeds and chopped green onions before serving.

Notes

You can swap shrimp for chicken or tofu. For a healthier twist, consider using brown rice and adding more vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
