  1. Begin by washing your tomatoes and cucumber thoroughly. Dice the tomatoes and set them aside.
  2. Slice the cucumber into thin rounds or small cubes, depending on your preference.
  3. In a large mixing bowl, combine the diced tomatoes and cucumbers.
  4. Add the cubed mozzarella and chopped basil to the bowl, mixing gently to avoid breaking the mozzarella.
  5. In a small bowl, whisk together the olive oil and balsamic vinegar, adding a pinch of salt and pepper for seasoning.
  6. Pour the dressing over the salad and toss gently until everything is well coated.
  7. Serve immediately for the freshest taste, or let it chill in the refrigerator for about 15 minutes for the flavors to meld.

Notes

This salad is versatile! Add olives and feta for a Mediterranean flair, or diced jalapeños for a spicy kick. You can also mix in fruits like avocado or watermelon for a sweet touch. Store leftovers in an airtight container for up to two days.
