Ingredients
  

Shortbread Base
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
Caramel Layer
  • 1 cup caramel candies, unwrapped
  • 1/4 cup heavy cream
Chocolate Topping
  • 1 cup milk chocolate chips
  • 1 teaspoon vanilla extract

Method
 

Preparing the Dough
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Gradually add in the flour and salt, mixing until a dough forms.
  4. Press the dough into the bottom of a lined baking pan.
  5. Bake for 15–20 minutes or until the edges are lightly golden.
Making the Caramel Layer
  1. In a saucepan, melt the caramel candies with heavy cream over low heat until smooth.
  2. Pour the caramel over the baked shortbread and let it cool.
Adding the Chocolate Topping
  1. Melt the milk chocolate chips in a separate bowl and stir in the vanilla extract.
  2. Pour the melted chocolate over the caramel layer and spread evenly.
Final Steps
  1. Allow the cookies to set at room temperature or in the refrigerator before cutting into bars.

Notes

For best texture, serve at room temperature. Store at room temperature for up to 2 days in an airtight container, or refrigerate for up to 1 week. Freeze for longer storage.
