Ingredients

  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1/2 cup vegetable oil
  • 1 tablespoon apple cider vinegar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, spices, and salt.
  3. In another bowl, mix the brown sugar, molasses, vegetable oil, and apple cider vinegar until well combined.
  4. Gradually mix the dry ingredients into the wet ingredients until a dough forms.
Baking
  1. Roll out the dough on a floured surface and cut into desired shapes.
  2. Place cookies on a baking sheet lined with parchment paper.
  3. Bake for 8-10 minutes, or until edges are firm.
  4. Allow cooling before decorating or serving.

Notes

Store in an airtight container for up to 5 days. For longer storage, freeze cooled cookies in a single layer for up to 3 months. Chill the dough 30 minutes if sticky, roll between parchment paper to avoid sticking, and do not overbake.
