Preparation
- Preheat the oven to 350°F (175°C).
- Line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a large bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, and salt until combined.
- In a separate bowl, whisk together the eggs, maple syrup (or honey), melted coconut oil (or applesauce), and vanilla extract until smooth.
- Gently fold the grated zucchini into the wet mixture, ensuring it is well-distributed.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix!
- If desired, fold in dark chocolate chips.
- Pour the batter evenly into each muffin cup, filling them about 2/3 full.
Baking
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Notes
Store leftovers in an airtight container at room temperature for up to three days. For longer storage, freeze them individually wrapped in plastic wrap.
