For the Beef
  • 1 pound ground beef (85/15 or leaner for a healthier option)
  • 1 tablespoon olive oil or neutral oil
  • 1 small onion, finely chopped swap with shallot for a sweeter, subtler note
  • 3 cloves garlic, minced or 1 teaspoon garlic powder in a pinch
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons hot honey plus extra to drizzle; substitute honey and a pinch of cayenne for more control over heat
  • 1 tablespoon rice vinegar or apple cider vinegar for brightness
  • 1/2 teaspoon smoked paprika or regular paprika
  • Salt and black pepper to taste
For Serving
  • 2 cups cooked rice or cauliflower rice for a lower-carb twist
  • 1 cup quick-pickled cucumbers or pickled red onions see notes
  • 2 each soft-boiled or fried eggs optional, for richness
  • Fresh herbs: cilantro or parsley, chopped
  • Sesame seeds and sliced scallions for garnish

Method
 

Preparation
  1. Warm the oil in a large skillet over medium-high heat until it shimmers.
  2. Add the chopped onion and sauté for 3–4 minutes until translucent and slightly sweet.
  3. Add the minced garlic and cook for 30 seconds more, until fragrant.
  4. Crumble in the ground beef and let it sear for 2–3 minutes without stirring.
  5. Break it apart and continue to cook until no pink remains and the juices have mostly evaporated.
  6. Sprinkle in the smoked paprika, season with salt and pepper, and pour the soy sauce and vinegar over the meat.
  7. Stir and let the flavors mingle for another minute.
  8. Reduce heat to low and drizzle in the hot honey, stirring quickly.
  9. Taste and adjust seasoning as needed.
  10. Build your bowls with rice, hot honey ground beef, pickles, an egg if using, and finish with herbs, sesame seeds, and scallions.

Notes

For variations, consider using lean ground turkey or chicken, adding roasted sweet potatoes, or making it vegetarian with tempeh. Serve with a salad to balance out the dish.
