  • 1 large Cucumber, sliced Persian or English cucumbers work well.
  • 1 cup Feta cheese, crumbled Can substitute with goat cheese.
  • 2 tablespoons Fresh mint, chopped Adds aromatic quality.
Dressing
  • 2 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 pinch Salt Enhances flavor.
  • 1 pinch Pepper Enhances flavor.

Preparation
  1. Cut the watermelon into bite-sized cubes, discarding any seeds if necessary.
  2. Slice the cucumber thinly, and then add it to the watermelon in a large bowl.
  3. Crumble the feta over the top, ensuring you get a good distribution.
  4. Finely chop a handful of fresh mint and sprinkle it into the mixture.
Dressing
  1. In a small bowl, whisk together olive oil, lime juice, salt, and pepper until combined.
  2. Drizzle this dressing over the salad.
Final Mixing
  1. Gently toss all the ingredients together, being careful not to mash the watermelon or feta.
  2. Taste and adjust seasoning if necessary, adding more lime juice or salt as desired.
  3. Serve immediately for the freshest flavor, or chill for 30 minutes to let the flavors meld.

Notes

This salad is best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to 2 days, but it's recommended to keep the dressing separate to avoid soggy cucumbers.
