Preparation
- Preheat your oven to 400°F (200°C) for roasting.
- On a baking sheet, arrange the cherry tomatoes.
- Slice off the top of the garlic head, drizzle with a little olive oil, and wrap it in foil. Place it on the baking sheet alongside the tomatoes.
- Pour olive oil over the tomatoes and sprinkle with salt and pepper. Toss gently to coat them well.
Cooking
- Place the baking sheet in the preheated oven and roast for 20-25 minutes, until the tomatoes are bursting and caramelized, and the garlic is soft.
Whipping the Feta
- In a bowl, combine the feta cheese and cream cheese. Blend until smooth and creamy using a hand mixer or food processor.
- Once roasted, carefully squeeze the softened garlic cloves out of their skins into the whipped feta. Mix until well incorporated.
Serving
- Spread the whipped feta on a serving platter. Top with the warm roasted tomatoes, drizzling the remaining juices from the pan on top. Garnish with fresh herbs if desired.
Notes
The whipped feta is perfect as a starter or shareable dish at gatherings. It pairs well with crusty bread, pita chips, or fresh vegetable sticks. Leftovers can be stored in an airtight container for up to 3 days.
