For the Roasted Tomatoes and Garlic

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) for roasting.
  2. On a baking sheet, arrange the cherry tomatoes.
  3. Slice off the top of the garlic head, drizzle with a little olive oil, and wrap it in foil. Place it on the baking sheet alongside the tomatoes.
  4. Pour olive oil over the tomatoes and sprinkle with salt and pepper. Toss gently to coat them well.
Cooking
  1. Place the baking sheet in the preheated oven and roast for 20-25 minutes, until the tomatoes are bursting and caramelized, and the garlic is soft.
Whipping the Feta
  1. In a bowl, combine the feta cheese and cream cheese. Blend until smooth and creamy using a hand mixer or food processor.
  2. Once roasted, carefully squeeze the softened garlic cloves out of their skins into the whipped feta. Mix until well incorporated.
Serving
  1. Spread the whipped feta on a serving platter. Top with the warm roasted tomatoes, drizzling the remaining juices from the pan on top. Garnish with fresh herbs if desired.

Notes

The whipped feta is perfect as a starter or shareable dish at gatherings. It pairs well with crusty bread, pita chips, or fresh vegetable sticks. Leftovers can be stored in an airtight container for up to 3 days.
