  • 1/2 cup celery, diced Finely diced for texture.
  • 1/4 cup red onion, diced Add last to avoid sogginess.
  • 1/2 cup grapes, halved Use fresh grapes for sweetness.
  • 1/2 cup mayonnaise Can substitute half with Greek yogurt for extra creaminess.
  • 1 tablespoon Dijon mustard Adjust according to taste.
  • Salt and pepper, to taste Taste and adjust seasonings after mixing.
  • Lettuce leaves, for serving Use crisp leaves for serving.

Preparation
  1. In a large bowl, combine the diced chicken, celery, red onion, and grapes.
  2. In a separate bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the chicken mixture and stir until well combined.
Serving
  1. Serve chilled or at room temperature on crisp lettuce leaves or as a sandwich filling.

Notes

Store in an airtight container in the refrigerator for up to 3–4 days. Serve on crackers or in avocado halves for appetizers. For the best texture, add grapes or mayo just before serving.
