Preparation
  1. Line a baking sheet with parchment paper, ensuring the paper extends beyond the edges for easy removal later.
  2. In a large bowl, combine Greek yogurt, honey (or maple syrup), and vanilla extract. Whisk until smooth and creamy.
  3. Pour the yogurt mixture onto the prepared baking sheet, spreading it evenly to about 1/2 inch thick.
  4. Scatter your choice of mixed berries, nuts, and optional drizzles of melted chocolate or nut butter across the yogurt.
  5. Transfer the baking sheet to the freezer and let it chill for at least 2 to 3 hours until firmly set.
  6. Once frozen, remove from the freezer and lift the yogurt bark out of the baking sheet using the parchment paper. Break it into pieces.
  7. Serve immediately, or store the pieces in a sealed container in the freezer for a refreshing treat later.

Notes

Yogurt Bark can be made up to a few days in advance. Store in a sealed container in the freezer for up to two weeks.
