Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan, or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas. Add the grated zucchini, granulated sugar, brown sugar, vegetable oil, vanilla extract, and eggs. Mix until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until thoroughly mixed.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.
- If desired, fold in chopped walnuts or chocolate chips.
- Pour the batter into your prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For variations, you can replace part of the flour with whole wheat flour, add nutmeg or fresh ginger for a spiced version, or use dried cranberries or raisins for added sweetness. This bread can be served warm with butter or cream cheese frosting.
